Mar. 2006 Champagne Martini 3 oz of chilled champagne
3 oz of Absolut vodka
2 tbsp raspberry puree
2 fresh raspberries
3:3:2:2 Add vodka to shaker and shake
Add 1 tbsp of raspberry in the bottom of each chilled martini glass
Strain 1/2 of the vodka into each of the glasses (don't disturb the raspberry puree)
Add 1/2 of the champagne to each glass
September 2006 French 75 1 ounces gin
1/4 ounce lemon juice
1/8 ounce simple syrup
5 ounces chilled champagne

Shake gin, lemon juice, and syrup with ice. Strain into a chilled martini glass. Top with champagne

History:

Named after the French 75-millimeter guns, this champagne cocktail was created during the first World War by American army officers. The original recipe called for gin, absinthe (now illegal in the United States) and calvados. Calvados is an apple brandy made in France. It is produced from an apple cider and aged in oak barrels for several years. The drink is often served in a small glass during the long meal to re-enhance the appetite.
